Homemade May Cookie and Ice Cream Sandwiches

 

All you need is: One batch of our Triple Chocolate Chip Oatmeal Cookies OR our Rich & Chewy Chocolate Chocolate Chip Cookies – AND – ½ gallon of ice cream (or frozen yogurt) in your favorite flavor. Optional: sprinkles, chopped nuts, mini chocolate chips, coconut or whatever garnish you would like to try.

Let’s get started: Using the May Cookie Co. cookie mix of your choice, prepare the cookies as instructed on the box. For this recipe, we recommend forming generous dough balls and then flattening them to about ½ inch. Your cookies will be 2 – 3 inches when they’re baked. Be sure to remove cookies from oven when edges are just set. Meanwhile, let the ice cream soften slightly as you prepare the cookies.

Cool cookies completely. Then scoop about ¼ cup of the softened ice cream onto the bottom of one of the cookies. Cover with another cookie and press together gently so that the ice cream reaches the edges of the cookies. If desired, sprinkle the edges with your choice of garnish. Wrap each sandwich in wax paper or foil and freeze until firm, at least 2 hours.

Makes 6 – 10 treats. Enjoy!
